Let’s talk about sheet pan pizza. They’re much easier to make since there’s no need to stretch the dough in the desired shape. We usually make whole wheat dough without any effort. It’s mixed easily and takes about 12 hours to rise in the fridge. Another good thing about that dough is that it can last in the fridge for up to three days.

The ingredients:

  • 1/2 large head cauliflower, or a whole head if you use a smaller one
  • 6 tablespoons olive oil
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 1/2 pounds whole wheat pizza dough; you can use store-bought instead
  • 2 ounces parmesan cheese, grated
  • 12 ounces mozzarella cheese
  • 2 tablespoons drained green peppercorns, drained capers, or anything else
  • 3 handfuls of baby greens like spinach or kale
  • 1 tablespoon balsamic vinegar

Preparing the Cauliflower Pizza

  1. Preheat the oven to 450ºF and cut the cauliflower (or divide it into pieces).
  2. Spread the cauliflower on a baking sheet and drizzle with olive oil (about two tablespoons). Sprinkle it with salt and pepper and bake it in the lowest position in your oven for 20 mins.
  3. Stretch the dough of your choice onto the sheet for baking. Place it in the center of the baking sheet, drizzle it with olive oil, and spread it over the whole baking sheet. You can let it sit for several minutes before continuing.
  4. Turn the oven to 500ºF. Prepare the meal while waiting. Drizzle with olive oil again, and spread the cauliflower, cheese, and capers. Bake it in the lowest position in the oven for 15 mins.
  5. Toss the greens in a bowl and mix them with the remaining olive oil, vinegar, salt, and pepper. Once the pizza is ready, sprinkle them on top. Cut in pieces and serve hot.
