Try This Rich, Easy, and Super Cheesy Taco Spaghetti

You should use a beef that has less than 12% fat for this recipe or drain away the extra fat. For the taco seasoning, it’s easiest to just use a packet, but you can also make your own.
You can also easily switch up some ingredients, like using a different type of pasta or adding different toppings.
How to Make It
Ingredients:
- 1 large red onion, diced
- 500g ground beef
- 1 oz packet taco seasoning
- 2 tbsp tomato paste
- 14 oz can chopped tomatoes
- 3 cups beef stock
- 300g uncooked spaghetti
- 150g full-fat sour cream
- 1 cup freshly grated cheddar
- 2 fresh tomatoes, finely diced
- 1-2 tbsp finely diced fresh coriander or parsley
- Salt & black pepper to taste
Instructions:
1. Put your olive oil in a pot that is deep enough to contain everything, and keep it on a medium heat.
2. Add the onion and cook until it has softened. Once done, add the beef. Make sure to stir it in and break it up until it has gone brown.
3. Stir in the seasoning until it has been absorbed and then add the tomato paste and stir well. Pour in the stock and the tomatoes, and then add the spaghetti. Make sure the heat you use keeps everything on a steady simmer. Turn the lot so it is nicely mixed.
4. Once the sauce is almost cooked and the spaghetti is almost soft, turn the heat down and add room-temperature sour cream. This needs to be cooked until the sauce has thickened. Once this has happened, turn the heat off and add the cheese until it is nice and gooey.
5. Serve this with some garlic bread or some salad, with some diced tomatoes or parsley, whatever your preference is.
